The point of the monkey in Nope was to help the protagonist, Daphne, face her fears and eventually overcome them. The monkey was a symbol of her fears, and she was able to overcome them by facing and conquering them one by one, upon meeting the monkey in the caves and river.
Eventually, the monkey vanished, signifying that Daphne had overcome her fears and had gained the courage and strength to carry on with her journey.
